Conceptual Butchery

A new butcher shop is set to open in Minneapolis, Minn. It will offer bacon, sausages, and other delicacies that Kale Walch and his sister have been selling at farmers markets in the area. “It’s going to be a vegan blood bath,” Kale says. That’s right: vegan. The Herbivorous Butcher is to be the first butcher shop in the United States where all the “meat” is actually made from such ingredients as soybeans and yeast. “The architect was joking that we have to get a massive slab of tofu and hang it from a meat hook,” said Walch. (AC/Minneapolis Star-Tribune) ...The only thing they’re butchering is the concept of meat. And butchering.
